If you steal those credit cards from the grocery stores?

If you steal those credit-cards and the gift cards from the grocery stores, like the Visa ones that are worth $100, or $50 for you to spend at Nordstroms, would they work if you just took them? Or do they have to go through the little scanner thing? Or, when you buy them, do you have to fill something out?
